SUNDAY RECIPE y Una Canción

Today, we are excited to share our Sunday Recipe y Una Canción series with you! Where we will feature Sunday recipes made in our Masa Memory Kitchen or by friends in their homes, along with our favorite repeat song of the week.

For our first Sunday Recipe y Una Canción, I asked Arden Sanchez from our team, to share some of her favorite ways to cook using Masa. She told us about one of her fondest memories of waking up to the smell of her mom making pancakes in the morning, while living in Santa Fe New Mexico. Having been diagnosed with celiac at a young, age, Arden’s mom found ways to adapt traditional recipes to fit her daughter’s new gluten-free diet.

Arden, an incredibly talented baker and cook, created this Masa Pancake recipe for us, inspired by what she remembers from watching her own mother cook them. The Pancakes taste even more delicious than they look!

It has been some time now since I’ve sat down to write our community here. We have been busy cooking, dreaming and planning. We have so much to share with you about everything we are creating and even more news to share about the incredible farmers we are partnering with in California, Arizona and Mexico. More on that in newsletters to come!

There has been a lot of movement mixed in with so much necessary grounding. Now more than ever, cooking is my refuge and a return home to myself. I can spend an entire day in my kitchen with my favorite playlist - captivated by ingredients and lost in a world that is my own… yet, one that is immensely communal. Sunday is one of the most important days for me to reset. A chance to spend time in the kitchen dreaming up recipes or simply cooking, just to cook. Music plays an intimate role in my cooking process. Once I find a song that puts me in a creative mood, I will let it loop for the whole day. From a young age, I felt the ways music influenced our family gatherings. There is power in a song that transforms a cook into a dancer… the two movements (cooking and dancing) existing together in a perfect tango. I am a firm believer that food tastes a little better when paired with the right song...

Our canción for this week is by SÁVILA. A trio, who creates and plays music from their ancestors. Sharing stories of inter-generational identity, healing and evolution. INGREDIENTS

Masa Pancake Batter

3 eggs (replaceable with flax eggs)

2 cups plant based milk

1/4 cup lemon juice

2 cups masa harina

2 teaspoons baking powder

½ teaspoon sea salt

1 tablespoon cinnamon

⅓ rd cup olive oil, coconut oil, or ghee

¼ - ½ cup honey


Strawberry Compote

2 pints strawberries

2 vanilla beans split lengthwise

Zest of two Cara Cara oranges

Zest of two Meyer lemons

1-2 tablespoons maple syrup

Pinch of sea salt

Whipped Cream

Coconut or organic heavy whipping cream

¼ cup - ½ cup maple syrup (taste as you go)

1 teaspoon vanilla extract

Pinch sea salt


EASY HOW-TO STEPS


Whipped Cream:

Add heavy cream to a cold mixing bowl. Using an electric hand mixer (this can also be done by hand but will take much longer), start to whisk the cream and slowly add in the vanilla, sea salt, and maple syrup to taste.

Coconut Whipped Cream:

Take one 14oz can of coconut cream and chill it overnight in the fridge, making sure not to tip the jar because this can separate the coconut cream. Once chilled, open the can carefully and remove only the top, (thick coconut cream) leaving the liquid behind. Take a chilled mixing bowl, add the coconut cream and begin to whisk for a minute. Then slowly add in the vanilla, sea salt, and maple syrup to taste.

Strawberry Compote:

Combine all ingredients into a saucepan, bring to a boil and then down to a simmer until the strawberries have turned into a loose jam. 

Combine the milk with lemon juice in a bowl and let it sour on the counter for five minutes as you prepare the other ingredients (this will replicate the taste of buttermilk).

Masa Pancakes:

Combine the masa with baking powder, sea salt, and cinnamon in a bowl. Then combine the milk mixture with the eggs, (or flax eggs)* oil, and honey. Slowly pour the dry ingredients into the wet ingredients, while mixing, until there are no lumps. Allow this to rest, as the masa will start to absorb the liquid and thicken into a batter. 

Heat up a cast iron or non-stick pan. Add olive oil, coconut, or ghee to the pan at medium heat. Pour a few spoonfuls of batter into the pan, making sure to move the batter into a circular pancake shape. Wait until you see the edges of the pancake crisp up and bubbles form in the batter, then flip! Make the pancakes to desired texture and thickness (I chose a more cake-y pancake by adding more batter to the pan). 

Lastly, assemble your pancakes as desired… I recommend more maple syrup than you think is necessary. Enjoy!

*Flax Egg:

Mix one tablespoon of flaxseed meal and 2.5 tablespoons of water. (this will replaces one egg) Allow your mixture to sit for about 5 minutes. Add the flax egg to your recipe as you would an egg.
